Daisy Diaz, chef and owner, was born in the Port of Guayaquil, Ecuador, in South America. Her mother was Italian and her father was Greek.

Daisy grew up in the busy port city where her father was chief of the port. Her mother had a reputation as a phenomenal cook, having learned recipes from Daisy's grandmother.

Daisy loved to help her mother cook, and over time she earned a reputation as a great cook herself. She demonstrated this talent when cooking for large family gatherings and parties, as well for the homeless. Daisy's sister, Maritza, cooks in the kitchen at Sabores. Daisy says " My recipes come from several generations" and "The important features of the menu are the quality ingredients and freshness".
